A cucumber and coconut salad from Maharashtra.

Method

  1. Dice the cucumber very finely, or grate it and remove excess water.
  2. Add chilies, peanut powder, salt, sugar, grated coconut to the cucumber and mix well.
  3. Now heat the ghee in a small pan, adding jeera, and asafoetida. Add it to the cucumber mixture.

Tip

To make peanut powder, roast shelled peanuts in a pan till the skin comes off easily. After removing the skin, grind coarsely in a mixer or a grinder.
